Southeast Asian Style Chicken Rice

Ingredients

Ingredients for Chicken Rice:

·         A juicy and plump chicken breast with the skin on

·         Salt to taste

·         A drizzle of vegetable oil

·         A pinch of ginger, freshly minced

·         A couple of cloves of garlic, finely chopped

·         A diced onion or two

·         A hint of turmeric

·         A cup and a tablespoon of aromatic jasmine rice

·         A rich and savory broth, made with 1 1/2 cups of chicken broth

Ingredients for Chicken Herb Salad:

·         Thinly sliced red onion

·         Green onions, sliced into rounds

·         A spicy and flavorful red Fresno chili, thinly sliced (or any other hot pepper of your choice)

·         A zesty squeeze of fresh lime juice

·         Soy sauce to taste

How to Make

To cook Southeast Asian Style Chicken Rice:

1.      Season chicken breast with salt and heat a skillet over medium-high heat. Sear chicken, skin-side down, until golden brown and cooked through, about 5 minutes per side.

2.      Remove the skin and chop finely. Cook chicken skin in the skillet until crisp, 3 to 5 minutes, then add ginger, garlic, onions, and turmeric. Cook until onions are translucent, about 5 minutes.

3.      Stir in rice and broth, bring to a boil, then reduce heat to low and simmer undisturbed for 20 minutes. Set aside to rest for 10 minutes.

4.      Shred or chop the chicken meat, place in a bowl, and add red onion, green onions, chili, lime juice, soy sauce, hot sauce, sesame oil, salt, pepper, mint, and cilantro. Toss and adjust to taste.

5.      Fluff rice, adjust seasoning, and serve topped with the chicken herb salad and lime wedges.
