Baked Oatmeal

Ingredients:

·         3 cups rolled oats

·         1 cup brown sugar

·         2 tsp ground cinnamon

·         2 tsp baking powder

·         1 tsp salt

·         2 eggs

·         1 cup milk

·         1/2 cup melted butter

·         2 tsp vanilla extract

·         3/4 cup dried cranberries

Instructions

1.      Preheat oven to 350°F (175°C).

2.      In a large bowl, mix oats, brown sugar, cinnamon, baking powder, and salt.

3.      Beat in eggs, milk, melted butter, and vanilla extract.

4.      Stir in dried cranberries.

5.      Pour mixture into a 9x13-inch baking dish.

6.      Bake until top is golden, approximately 40 minutes
