Ingredients:

2 medium eggplants
·
1 cup Italian seasoned
breadcrumbs
·
1/2 cup grated
Parmesan cheese
·
1 cup all-purpose
flour
·
3 large eggs
·
1 tsp salt
·
1/2 tsp black pepper

2 cups marinara sauce
·
2 cups shredded
mozzarella cheese
·

Instructions:
1. Preheat oven to 400°F.
2. Slice eggplants into 1/2-inch rounds.
3. In three separate bowls, place flour, beaten
eggs, and breadcrumb mixture (breadcrumbs, Parmesan cheese, salt, pepper).
4. Dip each eggplant slice in flour, then egg
mixture, then breadcrumb mixture.
5. Place on a baking sheet lined with parchment
paper.
6. Bake for 20 minutes or until golden brown.
7. In a 9x13 inch baking dish, spread 1 cup of
marinara sauce.
8. Place a layer of eggplant slices on top of
sauce.
9. Sprinkle with 1 cup of shredded mozzarella
cheese.
10. Repeat steps 7 to 9 for the remaining
eggplant, sauce, and cheese.
11. Bake for 20-25 minutes or until cheese is
