Buffalo Chicken Grilled Cheese

Ingredients:

·         1 cup shredded chicken

·         1/4 cup buffalo wing sauce

·         2 tbsp blue cheese crumbles

·         2 tbsp unsalted butter

·         2 slices whole grain bread

·         1/4 cup shredded pepper Jack cheese

Instructions:

1.      In a small bowl, mix together shredded chicken, buffalo wing sauce, and blue cheese crumbles.

2.      Heat a small skillet over medium heat.

3.      Spread 1/2 tablespoon of butter on one side of each slice of bread.

4.      Place one slice of bread, butter-side-down, onto the skillet.

5.      Top with shredded pepper Jack cheese.

6.      Spoon the chicken mixture over the cheese.

7.      Top with the other slice of bread, butter-side-up.

8.      Cook until the bread is lightly browned, about 2 1/2 minutes on each side.
